Description

This Crock Pot Shrimp Boil is a delightful and easy slow cooker recipe that combines tender red potatoes, smoked Andouille sausage, sweet corn, and perfectly cooked shrimp infused with bold Old Bay seasoning, lemon, and a touch of hot sauce. It's a hands-off, flavorful seafood feast perfect for a casual family dinner or gathering without the fuss of a traditional stovetop boil.

Ingredients

Base Ingredients

  • 1 ½ pounds red potatoes, quartered
  • 1 small head of garlic, cloves removed and peeled
  • 2 bay leaves
  • 6 cups water
  • ¼ cup Old Bay seasoning
  • 1 tablespoon hot sauce (Franks recommended)
  • 1 tablespoon fresh squeezed lemon juice

Meat and Vegetables

  • 1 pound smoked Andouille sausage, sliced
  • 3 ears corn, shucked and sliced into thirds
  • 2 pounds raw shrimp, tails removed

For Serving (Optional)

  • 1/4 cup butter, melted
  • 3 tablespoons fresh minced parsley
  • Lemon wedges

Instructions

  1. Prepare the Base: Add the quartered potatoes, peeled garlic cloves (optionally smashed for a stronger flavor), and bay leaves to the bottom of a 6-quart oval slow cooker. These ingredients form the flavor foundation of the boil.
  2. Add Seasonings and Start Cooking: Pour the water, Old Bay seasoning, hot sauce, and fresh lemon juice over the potatoes in the slow cooker. Stir gently to combine. Cover and cook on high for 2 hours to let flavors meld and potatoes start to soften.
  3. Incorporate Sausage and Corn: After 2 hours, add the sliced smoked Andouille sausage and the sliced corn to the slow cooker. Cover again and continue cooking on high for an additional 2 to 3 hours, until potatoes are tender, and the corn is cooked through.
  4. Add Shrimp: Gently stir in the raw shrimp. Cover and cook on high for about 15 minutes, or until the shrimp turns pink and is cooked through. Be careful not to overcook to avoid rubbery shrimp.
  5. Drain and Finish: Carefully drain most of the cooking juices from the slow cooker. Pour melted butter over the shrimp boil and sprinkle with fresh minced parsley for added richness and color.
  6. Serve: Serve the shrimp boil directly from the slow cooker or use a slotted spoon to transfer it to a serving platter. Add melted butter on top if not added earlier. Garnish with lemon wedges for a bright, fresh finish.

Notes

  • Smashing the garlic cloves before adding enhances the garlic flavor significantly.
  • Use fresh lemon juice for the best bright flavor; bottled lemon juice can alter the taste.
  • Overcooking shrimp in the slow cooker at high heat can result in rubbery texture; watch closely during the last step.
  • The recipe can be adjusted for spiciness by increasing or decreasing the hot sauce quantity.
  • Butter and parsley are optional but add a delicious finishing touch.
  • Drain the cooking liquid partially to prevent the dish from becoming too soupy while serving.
