Perfect for an easy, hands-off meal, this recipe combines classic scampi flavors with the convenience of a crock pot, resulting in juicy shrimp infused with buttery, herbaceous goodness.
Ingredients
Liquid Ingredients
- 1/4 cup chicken bone broth
- 1/2 cup white cooking wine
- 2 tablespoons olive oil
- 2 tablespoons butter
- 1 tablespoon lemon juice
Other Ingredients
- 1 tablespoon minced garlic
- 2 tablespoons parsley (finely chopped)
- salt and pepper to taste
- 1 pound raw shrimp (peeled & deveined)
- 1/2 teaspoon red pepper flakes (optional)
- grated parmesan (optional)
Instructions
- Combine ingredients: In a 2-quart crock pot, mix together the chicken bone broth, white cooking wine, olive oil, butter, minced garlic, finely chopped parsley, lemon juice, salt, pepper, and red pepper flakes if using. Stir to combine all flavors.
- Add shrimp: Place the peeled and deveined raw shrimp into the crock pot, making sure they are submerged in the liquid mixture. Cover the crock pot.
- Cook shrimp: Set the crock pot to your preferred setting—cook on high for about 1 1/2 hours or on low for 2 1/2 hours. The shrimp will be tender and infused with the scampi flavors once done.
- Serve: Once cooked, serve the shrimp scampi hot, topped with grated parmesan if desired, adding an extra layer of savory richness to the dish.
Notes
- Adjust cooking time based on your crock pot model to avoid overcooking shrimp, which can become rubbery.
- White cooking wine adds authentic flavor, but dry white wine can also be used as a substitute.
- For a spicier version, increase or omit the red pepper flakes according to taste.
- Serve with pasta, crusty bread, or a simple side salad for a complete meal.
- Leftovers can be refrigerated for up to 2 days and gently reheated.
