Description

A hearty and comforting Crockpot Vegetable Beef Soup packed with tender ground beef, potatoes, mixed vegetables, and flavorful tomatoes simmered to perfection. This easy-to-make slow cooker recipe is perfect for busy days and serves as a nutritious meal for the whole family.

Ingredients

Meat

  • 2 pounds ground beef (browned and drained)

Vegetables

  • ½ medium onion (diced)
  • 3 potatoes (peeled and diced into 1 inch pieces)
  • 16 oz frozen mixed vegetables

Liquids & Canned Goods

  • 3 cans diced tomatoes (14.5 oz cans, not drained)
  • 4 cups beef broth

Seasonings

  • 2 tsp Italian seasoning
  • 1 tsp salt
  • ½ tsp pepper

Instructions

  1. Prepare Ingredients: Brown the ground beef in a skillet over medium heat until fully cooked, then drain excess fat. Dice the onion and peel and cut the potatoes into 1 inch pieces.
  2. Combine in Crockpot: In a 6-quart crockpot, add the browned ground beef, diced onion, diced potatoes, frozen mixed vegetables, canned diced tomatoes (with juice), beef broth, Italian seasoning, salt, and pepper. Stir gently to combine all ingredients evenly.
  3. Cook the Soup: Cover the crockpot with the lid and cook on low heat for 4-6 hours or on high heat for 2-3 hours until the vegetables are tender and flavors meld together.
  4. Serve: After cooking, give the soup a good stir, ladle into bowls, and serve hot. Enjoy this warm and nourishing meal!

Notes

  • You can substitute ground beef with ground turkey for a leaner option.
  • Adding other vegetables like carrots or celery can enhance flavor and nutrition.
  • For thicker soup, mash some of the potatoes inside the crockpot before serving.
  • Adjust salt and pepper according to taste preferences.
  • Leftovers keep well in the refrigerator for up to 3 days or freeze for up to 2 months.
