Description
A refreshing and tangy cucumber salad inspired by everything bagel seasoning, combining crisp cucumbers, creamy sour cream dressing, and a zesty blend of spices for a quick and flavorful side dish.
Ingredients
Vegetables
- 2 English cucumbers, thinly sliced, peeled and deseeded if desired
- 1/2 cup thinly sliced red onion
Seasonings & Dressing
- 1 teaspoon salt + more to taste
- 1/2 cup sour cream
- 3 tablespoons everything bagel seasoning
- 2 teaspoons white vinegar
- 1/2 teaspoon black pepper + more to taste
Instructions
- Salt the Cucumbers: Toss the thinly sliced cucumbers with 1 teaspoon of salt in a colander over the sink or in a bowl; let them rest for 30 minutes to an hour to draw out excess moisture.
- Rinse and Dry: Gently rinse the cucumbers after resting to remove excess salt, then press them with your hands or pat dry with paper towels to squeeze out remaining liquid.
- Prepare the Dressing: In a separate bowl, mix together sour cream, everything bagel seasoning, white vinegar, and black pepper to create the creamy, flavorful dressing.
- Combine Ingredients: Add the cucumbers and the thinly sliced red onion to the dressing; toss to coat evenly. Season with additional salt and pepper to taste.
- Chill and Serve: Serve immediately for a crisp texture or refrigerate for at least 30 minutes to allow the flavors to meld beautifully before serving.
Notes
- Peeling and deseeding the cucumbers is optional but helps reduce bitterness and excess moisture.
- Refrigerate leftovers in an airtight container for up to 2 days; cucumbers will soften over time.
- To make it dairy-free, substitute sour cream with a vegan yogurt alternative.
- Everything bagel seasoning can be homemade or store-bought and typically includes sesame seeds, poppy seeds, dried garlic, dried onion, and salt.
