Ingredients

Eggs

  • 3 eggs (approximately 55g or 2 oz each)

Chocolate Mixture

  • 125g (4.5 oz) 70% cocoa or bittersweet chocolate, broken into small 1 cm pieces
  • 10g (0.3 oz) unsalted butter

Whipped Cream

  • 1/2 cup full fat cream
  • More whipped cream for garnish

Sweetener

  • 3 tbsp caster sugar (superfine white sugar)

Garnish

  • Chocolate shavings
  • Optional: raspberries and a tiny sprig of mint for color


Instructions

  1. Prepare at a steady pace: To achieve the best texture, ensure your whipped egg whites and cream remain cool and do not warm up during preparation.
  2. Separate eggs: Keep the eggs cold and separate the whites into a large bowl and yolks into a small bowl. Set the whites aside while preparing other ingredients.
  3. Whisk yolks: Beat the egg yolks until they are uniform in texture and color.
  4. Melt chocolate and butter: Place chocolate and butter in a microwave-safe bowl and melt in 20-second bursts, stirring in between until smooth. Allow to cool slightly to room temperature but keep it pourable.
  5. Whip cream: Beat the cream until stiff peaks form, careful not to over-whip.
  6. Whip egg whites and sugar: Using clean whisks, add sugar to egg whites and beat until firm peaks are achieved – the texture should resemble a flopping elf hat.
  7. Fold yolks into cream: Using a rubber spatula, gently fold the egg yolks into the whipped cream with up to 8 folds; some streaking is acceptable.
  8. Check chocolate temperature: Ensure chocolate is cooled to at least 35°C (95°F) but ideally around 40°C (104°F). If too cool or thick, gently warm in 5-second bursts until runny.
  9. Fold chocolate into cream mixture: Pour chocolate into the cream and yolk mixture and fold through with up to 8 folds; some streaks are okay.
  10. Incorporate egg whites in two stages: First, fold 1/4 of the egg whites into the chocolate mixture until blended (about 10 folds), focusing on breaking down white lumps. Then, fold the remaining egg whites in gently until no visible white patches remain (up to 12 folds).
  11. Chill mousse: Divide the finished mousse evenly into 4 small serving glasses or pots. Refrigerate for a minimum of 6 hours, preferably overnight, to set.
  12. Serve: Garnish each mousse with extra whipped cream and chocolate shavings. Optionally, add fresh raspberries and a tiny sprig of mint for a colorful and fresh touch.
