Description

This Dorito Casserole is a comforting layered dish featuring crunchy crushed Nacho Cheese Doritos, savory ground beef cooked with cheddar cheese soup, cream of chicken soup, evaporated milk, and diced green chilies, all topped with melted Mexican cheese. Baked to perfection, this casserole delivers the perfect balance of crispy chip textures, creamy cheesy flavors, and hearty meatiness in every bite, making it an ideal family-friendly meal or party dish.

Ingredients

For the Casserole:

  • 14 ounce party size bag of Nacho Cheese Doritos
  • -2 pounds ground beef
  • 1 (10¾ ounce) can cheddar cheese soup
  • 1 (10¾ ounce) can cream of chicken soup
  • 1 (12 ounce) can evaporated milk
  • 1 (4 ounce) small can diced green chilies
  • 2-3 cups shredded Mexican cheese blend
  • 1 packet taco seasoning (optional)

Additional Topping Options:

  • Sour cream
  • Diced green onion
  • Sliced cherry tomatoes
  • Sliced avocado or guacamole
  • Salsa

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C) to prepare for baking the casserole.
  2. Cook Ground Beef: In a large pan over medium heat, brown the ground beef until fully cooked. Drain any excess fat. If desired, stir in the taco seasoning packet now to evenly season the meat.
  3. Add Soups and Chilies: To the browned beef, add the cheddar cheese soup, cream of chicken soup, evaporated milk, and diced green chilies. Stir continuously over medium heat until the mixture becomes bubbly and well combined.
  4. Prepare Baking Dish: Spray a 9×13-inch casserole dish with non-stick cooking spray to ensure easy removal and clean-up.
  5. Layer Chips: Spread half of the Dorito chips evenly across the bottom of the prepared baking dish. Lightly crumble the chips but avoid breaking them into very fine pieces to maintain texture.
  6. Layer Meat Mixture: Spoon half of the hot meat and soup mixture evenly over the Dorito layer.
  7. Add Cheese: Sprinkle about 1 cup of shredded Mexican cheese blend on top of the meat layer. Feel free to add more cheese if a cheesier casserole is desired.
  8. Repeat Layers: Repeat the layering process with the remaining chips, meat mixture, and shredded cheese to create a second uniform layer.
  9. Bake: Place the casserole in the preheated oven and bake for approximately 20 minutes, or until the cheese on top is fully melted and the casserole is heated through.

Notes

  • This casserole makes excellent leftovers; although the Doritos soften somewhat after refrigeration, they retain enough texture to remain enjoyable.
  • You can customize the toppings with sour cream, green onions, cherry tomatoes, avocado or guacamole, and salsa for added flavor and freshness.
  • For a spicier kick, add jalapeños or hot sauce to the meat mixture before baking.
