Description

This Dump & Go Chicken Burrito Bowl recipe is a simple, hands-off slow cooker meal perfect for busy days. Combining chicken breast with flavorful ingredients like black beans, corn, diced tomatoes, brown rice, and taco seasoning, it creates a hearty and delicious burrito bowl. Minimal prep and easy cleanup make it a family-friendly option served with fresh toppings like avocado, lettuce, and cheese.

Ingredients

Main Ingredients

  • 1½ lbs chicken breast (about 2 average sized)
  • 1 (15 oz) can black beans, drained and rinsed
  • 1 (15 oz) can corn (or use frozen corn, thawed)
  • 1 (15 oz) can diced tomatoes, undrained
  • 1 cup brown rice (substitute with white rice if desired)
  • 1½ cups chicken broth
  • ½ tsp salt (adjust to taste)
  • 1-2 tbsp taco seasoning (adjust to taste)

Toppings (Optional)

  • Avocado or guacamole
  • Shredded lettuce
  • Shredded cheese

Instructions

  1. Prepare crockpot: Line your crockpot with a crockpot liner for easier cleanup, optional but recommended.
  2. Combine ingredients: Add whole chicken breasts, chicken broth, black beans, corn, diced tomatoes, brown rice, salt, and taco seasoning into the crockpot. Stir gently to combine all ingredients evenly.
  3. Cook: Set crockpot to high and cook for 3-4 hours, or set to low and cook for 5-6 hours until the rice and chicken are fully cooked.
  4. Shred chicken: Remove chicken breasts from the crockpot and shred them using two forks. Return shredded chicken to the crockpot and stir well.
  5. Simmer: Let the mixture simmer for an additional 20 minutes to meld flavors. Taste and adjust seasoning with more taco seasoning or salt as needed.
  6. Serve: Serve the mixture over a bed of shredded lettuce or inside warmed tortillas. Top with avocado, guacamole, cheese, or any preferred toppings.

Notes

  • You can substitute white rice for brown rice if you prefer a different texture or shorter cook time.
  • Using a crockpot liner makes cleanup much easier.
  • If you like spicier food, add more taco seasoning or include chopped jalapeños.
  • Leftovers store well in the refrigerator for up to 4 days.
  • For a lower-carb option, serve over lettuce instead of rice or tortillas.
