Description

A quick and flavorful Easy Air Fryer Cajun Shrimp Dinner featuring spicy shrimp, savory andouille sausage, and fresh vegetables cooked to perfection in the air fryer for a healthy, delicious meal in just 30 minutes.

Ingredients

Seafood and Meat

  • 1 tablespoon Cajun or Creole seasoning
  • 24 (1 pound) cleaned and peeled extra jumbo shrimp
  • 6 ounces fully cooked Turkey or Chicken Andouille sausage or kielbasa, sliced

Vegetables

  • 1 medium zucchini (8 ounces), sliced into 1/4-inch thick half moons
  • 1 medium yellow squash (8 ounces), sliced into 1/4-inch thick half moons
  • 1 large red bell pepper, seeded and cut into thin 1-inch pieces

Seasoning and Oil

  • 1/4 teaspoon kosher salt
  • 2 tablespoons olive oil

Instructions

  1. Season the Shrimp: In a large bowl, combine the Cajun seasoning with the peeled and cleaned shrimp. Toss thoroughly to ensure each shrimp is evenly coated with the seasoning, infusing the seafood with bold Cajun flavors.
  2. Add Vegetables and Sausage: To the bowl with seasoned shrimp, add the sliced Andouille sausage, zucchini, yellow squash, red bell pepper, and kosher salt. Drizzle with olive oil, then toss everything together until well mixed and evenly coated with oil and seasoning.
  3. Preheat Air Fryer: Preheat your air fryer to 400°F (204°C) to prepare for air frying the shrimp and vegetable mixture efficiently, ensuring a crispy and flavorful outcome.
  4. First Batch Cooking: Divide the shrimp and vegetable mixture into two batches if needed based on the air fryer basket size. Place the first batch into the air fryer basket and cook for 8 minutes, shaking the basket 2 to 3 times during cooking to promote even crisping and prevent sticking.
  5. Second Batch Cooking: Remove the first batch and set it aside. Add the remaining shrimp and vegetables to the air fryer basket and repeat the 8-minute cooking process, shaking 2 to 3 times for even cooking.
  6. Final Crisp: Once both batches are cooked, return the first batch back into the air fryer and cook for an additional 1 minute to reheat and crisp the shrimp and vegetables, ensuring the meal is served hot and delicious.

Notes

  • If your air fryer basket is large enough, you can cook the shrimp and vegetables in one batch to save time.
  • You can substitute the Andouille sausage with your preferred cooked sausage like kielbasa or smoked sausage.
  • Adjust the Cajun seasoning amount to taste depending on your spice preference.
  • Shaking the basket during cooking helps ensure even cooking and prevents sticking or burning.
  • Serve this dish with cooked rice or crusty bread for a full meal.
