Description

These easy Cake Cookie Bars combine the convenience of boxed cake mix with customizable add-ins to create a simple and delicious treat. With a rich, thick batter and a tender crumb, these bars bake up soft, chewy, and perfect for sharing. Ready in under 30 minutes, they’re a fast way to satisfy your sweet tooth with endless flavor possibilities.

Ingredients

Base Ingredients

  • 15.25 oz cake mix (any flavor)
  • 2 large eggs
  • ½ cup (113g) unsalted butter, melted
  • 1 tsp vanilla extract

Add-ins

  • 1 ½ cups add-ins of your choice (e.g., chocolate chips, nuts, dried fruit, candy pieces)

Instructions

  1. Preheat the oven: Set your oven to 350ºF (175ºC). Prepare a 9x13 inch baking pan by spraying it thoroughly with nonstick spray to prevent sticking, then set the pan aside while you make the batter.
  2. Mix the batter: In a large mixing bowl, combine the cake mix, eggs, melted butter, and vanilla extract. Stir in your chosen add-ins until fully incorporated. Note that the batter will be very thick, which is normal for this recipe.
  3. Spread the batter: Transfer the thick batter into the prepared baking pan. Use a spatula or your clean hands to press and spread the batter evenly across the pan’s surface. If you want, sprinkle a few extra add-ins on top for added texture and appearance.
  4. Bake the bars: Place the pan in the preheated oven and bake for 17 to 20 minutes, or until you notice the edges puff up slightly and the bars begin to set. The center should be mostly firm but still soft.
  5. Cool and serve: Remove the pan from the oven and allow the bars to cool completely on a wire rack before cutting into squares. This ensures they set properly and hold together when sliced.

Notes

  • You can use any flavor of cake mix to customize these bars to your liking, from chocolate to strawberry or vanilla.
  • Add-ins can be anything you enjoy: chocolate chips, chopped nuts, dried cranberries, or mini candies work great.
  • Make sure to cool the bars completely before slicing to avoid crumbling.
  • Store leftovers in an airtight container at room temperature for up to 3 days.
  • For a gluten-free option, use a gluten-free cake mix and ensure add-ins are gluten-free.
