Instructions

  1. Activate Yeast: Whisk the yeast and sugar into the warm water and cover. Let it sit for 1 minute until it starts to activate.
  2. Mix Dough Ingredients: Whisk in melted butter and salt into the yeast mixture. Add 3 cups (375g) flour and mix well with a wooden spoon or dough hook until combined. Gradually add another 3/4 cup (94g) flour until the dough is slightly tacky and pulls away from the bowl sides. Add more flour 1 tablespoon at a time if needed.
  3. Knead the Dough: Using a stand mixer with dough hook, knead the dough for 3 to 5 minutes or by hand on a lightly floured surface for the same duration. Add small amounts of flour if too sticky. Dough should be soft and pass the windowpane test indicating proper gluten development.
  4. Rest the Dough: Shape the dough into a ball, cover lightly with a towel, and let it rest for 10 to 30 minutes. This rest helps relax the gluten and makes shaping easier.
  5. Prepare to Shape: Preheat oven to 400°F (204°C), and line two baking sheets with silicone mats or parchment paper (greased or sprayed).
