Ingredients
Carrots
- 1 lb. carrots, washed & peeled
Glaze & Seasoning
- 1 Tbsp honey (plus more for serving)
- 1 Tbsp olive oil
- 2 garlic cloves, minced
- ½ tsp dried dill (or 1 Tbsp chopped fresh dill)
- ¼ tsp salt
- Cracked black pepper, to taste
Toppings
- ¼ cup feta cheese, crumbled
- Fresh dill, for garnish
Instructions
- Preheat the oven: Preheat your oven to 425 degrees Fahrenheit and line a large baking pan with parchment paper to prevent sticking and make cleanup easy.
- Prepare the carrots: Peel the carrots and trim the ends. Slice them on the bias into thirds or roughly 1½ inch pieces. If some pieces are large, slice them in half lengthwise to ensure even roasting. Place all cut carrots into a large mixing bowl.
- Coat the carrots: Add the olive oil, honey, minced garlic, dried or fresh dill, salt, and cracked black pepper to the bowl with the carrots. Toss everything together until the carrots are evenly coated with the seasoning and glaze.
- Arrange on baking pan: Using a slotted spoon, transfer the carrots from the bowl onto the prepared baking pan, spreading them out in a single layer. Reserve the leftover glaze liquid in the bowl for later use.
- Roast the carrots: Place the pan in the preheated oven and roast the carrots for 20 to 25 minutes or until they become tender. About 5 to 10 minutes before finishing, brush the reserved glaze liquid over the carrots to enhance their sweetness and flavor.
- Add feta cheese: Once the carrots are tender and roasted, transfer them to a serving platter or bowl. Toss them gently with crumbled feta cheese for a creamy and tangy contrast.
- Garnish and serve: Serve the roasted carrots immediately, garnished with freshly chopped dill and an extra drizzle of honey if desired for added sweetness and aroma.
Notes
- Use fresh dill if available for a brighter flavor, but dried dill works well too.
- Slicing the carrots evenly ensures they roast uniformly and cook through properly.
- You can adjust the amount of honey according to your preferred sweetness level.
- For a nuttier flavor, consider sprinkling toasted pine nuts or walnuts along with the feta.
- These carrots make a great side dish for roasted meats, grilled poultry, or vegetarian meals.
- Store leftovers in an airtight container in the refrigerator for up to 3 days and reheat gently.
