  • 1/3 cup Parmesan cheese, freshly grated

Instructions

  1. Prepare the base: In a large stockpot, melt butter over medium-high heat until it starts to bubble, about 1 minute. Add the diced onion and sauté until the onion is soft, tender, and beginning to brown, approximately 3-4 minutes.
  2. Create the roux and add seasoning: Sprinkle in the flour and stir well to combine with the onion mixture. Cook this mixture for another minute to remove the raw flour taste.   3. Incorporate mashed potatoes and cheese: Add the leftover mashed potatoes and freshly grated Parmesan cheese to the pot. Stir continuously until the mashed potatoes break up completely and the cheese melts into the soup. Season with salt and pepper to your preference.
