Description

This Easy Mexican Chicken Marinade recipe features a flavorful blend of chili powder, cumin, smoked paprika, and fresh cilantro, infused with lime juice and olive oil to tenderize and season boneless chicken breast. Perfect for a quick and versatile meal, the marinated chicken can be baked, grilled, air fried, or pan-fried to your preference, resulting in juicy, aromatic chicken with vibrant Mexican-inspired flavors.

Ingredients

Chicken

  • 500 g boneless chicken breast

Marinade

  • ½ tablespoon chili powder
  • 1 teaspoon cumin
  • ½ tablespoon smoked paprika
  • 1 teaspoon oregano
  • 1 tablespoon fresh cilantro (finely chopped)
  • 2 tablespoons lime juice
  • ½ teaspoon brown sugar
  • 2 tablespoons olive oil
  • Salt, to taste
  • Black pepper, to taste

Instructions

  1. Make the marinade: In a medium bowl, combine chili powder, cumin, smoked paprika, oregano, brown sugar, finely chopped fresh cilantro, lime juice, olive oil, salt, and black pepper. Stir thoroughly to form a smooth and well-mixed marinade.
  2. Marinate the chicken: Place the boneless chicken breasts in a shallow dish or a resealable ziplock bag. Pour the prepared marinade over the chicken, ensuring each piece is evenly coated. Cover the dish with clingfilm or seal the bag tightly, then refrigerate for at least 30 minutes to allow the flavors to penetrate. For best results, marinate up to 24 hours.
  3. Cook the chicken: Choose your preferred cooking method: bake, grill, air fry, or pan-fry. If baking, preheat oven to 400°F (200°C) and cook for about 20-25 minutes until internal temperature reaches 165°F (74°C). For grilling or pan-frying, cook each side for approximately 6-7 minutes until the chicken is cooked through. When air frying, set temperature to 375°F (190°C) and cook for 15-18 minutes, turning halfway. Use an instant-read thermometer to ensure the chicken reaches 165°F (74°C) internally to guarantee safety and optimal juiciness.

Notes

  • Marinating longer enhances the flavor but avoid exceeding 24 hours to prevent the chicken from becoming too soft.
  • Adjust chili powder based on your preferred spice level.
  • Use fresh lime juice for best acidity and brightness.
  • Can be served with rice, in tacos, or over a salad for a complete meal.
  • For juicier chicken, avoid overcooking and monitor the internal temperature closely.
