Description

These easy Peanut Butter Rice Krispie Treats combine the classic marshmallow cereal treat with creamy peanut butter and a decadent chocolate topping. Perfectly sweet and crunchy, they make a delightful and simple dessert or snack that can be prepared in under 30 minutes and set to perfection in just 2 hours without baking.

Ingredients

Main Ingredients

  • 1/4 cup unsalted butter
  • 1 10 oz bag mini marshmallows (about 5 cups)
  • 1/2 cup peanut butter
  • 6 cups Rice Krispie cereal

Chocolate Topping

  • 8 oz chocolate chips (about 1 1/3 cups)
  • 2 teaspoons vegetable oil

Instructions

  1. Prepare the Pan: Lightly grease a 9x13 inch pan with butter or non-stick cooking spray to prevent sticking.
  2. Melt Ingredients: In a large saucepan, melt the unsalted butter, mini marshmallows, and peanut butter together over low heat, stirring gently to combine thoroughly.
  3. Add Cereal: Once the mixture is fully melted and smooth, remove the saucepan from heat and stir in the Rice Krispie cereal until evenly coated.
  4. Press Into Pan: Transfer the mixture to the prepared pan and press it down evenly. To prevent sticking, lightly spray your hands with non-stick cooking spray before pressing.
  5. Melt Chocolate: Place the chocolate chips in a medium-sized heatproof bowl. Microwave in 45-second intervals on medium power, stirring between each, until the chocolate is almost melted. Then stir until smooth.
  6. Add Oil and Pour: Stir the vegetable oil into the melted chocolate to create a smooth glaze, then pour it evenly over the pressed cereal mixture in the pan.
  7. Harden: Allow the chocolate to harden at room temperature for about 2 hours until set.
  8. Serve: Cut into squares once set and store the treats in an airtight container at room temperature to maintain freshness.

Notes

  • Using peanut butter adds a rich, nutty flavor that balances the sweetness.
  • Lightly spraying your hands with cooking spray helps prevent the sticky mixture from adhering to your skin when pressing.
  • Microwaving chocolate on medium power prevents burning and ensures smooth melting.
  • If desired, substitute chocolate chips with chopped chocolate for a richer chocolate topping.
  • Store the treats in an airtight container at room temperature for up to 3-4 days.
