Description

A quick and flavorful Easy Sausage and Peppers recipe featuring tender sautéed bell peppers, onions, and juicy turkey sausage, seasoned with garlic and Italian herbs. Perfect for a hearty weeknight meal served over steamed rice or enjoyed on its own.

Ingredients

Main Ingredients

  • 1 tablespoon unsalted butter
  • 1 tablespoon olive oil
  • 1 green bell pepper, sliced into strips
  • 1 red bell pepper, sliced into strips
  • 1 large white onion, sliced into half-moons
  • 12-13 ounce turkey sausage links, sliced on a bias into rounds
  • 8 cloves garlic, finely minced (or 1 tablespoon jarred minced garlic)
  • 2 teaspoons Italian seasoning or herbs de provence
  • Kosher salt & fresh ground black pepper, to taste

Optional Ingredients

  • Steamed white rice or rice of choice, for serving
  • 1-2 tablespoons fresh chopped parsley, for garnish

Instructions

  1. Heat the fat and sauté vegetables: In a large skillet, heat the butter and olive oil over medium-high heat. Add the sliced bell peppers and onions. Sauté them until they are tender and start to caramelize lightly, about 10-12 minutes. Adjust the heat if the mixture is browning too quickly to prevent burning and ensure even cooking.
  2. Add the sausage: Add the sliced turkey sausage rounds to the skillet and stir well to combine with the peppers and onions. Continue cooking for another 3-4 minutes until the sausage is golden brown and cooked through.
  3. Season and finish cooking: Stir in the minced garlic, Italian seasoning or herbs de Provence, and salt and black pepper to taste. Cook the mixture for an additional 1-2 minutes, allowing the flavors to meld nicely without burning the garlic.
  4. Garnish and serve: Remove from heat and garnish with fresh chopped parsley. Serve immediately over steamed rice if desired. Enjoy your flavorful sausage and peppers!

Notes

  • For a spicier version, use hot Italian sausage instead of turkey sausage.
  • You can substitute turkey sausage with pork or chicken sausage according to preference.
  • Serve with rice, crusty bread, or pasta for a complete meal.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
  • To save time, you can use pre-sliced peppers and pre-minced garlic.
