Wet Brine Ingredients

  • 8 cups water
  • 1/2 cup kosher salt
  • 1/2 cup dark brown sugar
  • 1 tablespoon dried red pepper flakes
  • 1 tablespoon dried sage
  • 1 bunch fresh thyme
  • 2 heads garlic, sliced in half
  • 8 cups water (additional)

Turkey

  • 14 to 18-pound turkey, cleaned and innards removed

Dry Brine Ingredients

  • 8 tablespoons kosher salt
  • 4-8 tablespoons freshly cracked black peppercorns
  • 4 tablespoons dried oregano
  • 4 tablespoons garlic powder
  • 3 tablespoons dried basil
  • 2 tablespoons dried thyme
  • 2 tablespoons paprika


Instructions

  1. Prepare the Wet Brine: In a large pot, combine 8 cups of water, 1/2 cup kosher salt, 1/2 cup dark brown sugar, dried red pepper flakes, dried sage, fresh thyme, and halved garlic heads. Heat over medium-high until boiling, then lower to a simmer and cook for 5 minutes until sugar dissolves and flavors meld. Remove from heat and cool completely, stirring in the remaining 8 cups of water after cooling.
  2. Brine the Turkey (Wet Method): Place the turkey in a container that comfortably fits it, pour the cooled brine over the bird ensuring it is fully submerged (add more water if necessary). Turn the turkey a few times for even seasoning, then leave it breast-side down. Refrigerate for at least 8 hours and up to 72 hours. After brining, remove the turkey, discard the brine, and prepare for roasting.
  3. Prepare the Dry Brine: Mix together kosher salt, cracked black peppercorns, dried oregano, garlic powder, dried basil, dried thyme, and paprika in a bowl to combine the dry seasoning blend.
  4. Apply the Dry Brine: Set a wire cooling rack on a baking sheet and place the cleaned turkey on it. Evenly rub the dry brine seasoning: 1/2 cup on the back, 1/2 cup on the legs, and 1 cup on the breast of the turkey. Do not cover the turkey after brining.
  5. Rest the Dry Brined Turkey: Refrigerate the turkey uncovered for at least 24 hours and up to 72 hours to allow flavors to penetrate and skin to dry for crispier roasting.
  6. Prepare for Roasting: After the dry brining period, brush off any excess dry brine and discard. If possible, let the turkey sit uncovered in the refrigerator for an additional 4 hours to dry the skin further.
