Description

This rich and decadent French Silk Pie features a crunchy Oreo cookie crust filled with a luscious, silky smooth chocolate filling, topped with a fluffy whipped cream layer and garnished with chocolate shavings or cocoa powder. Perfect for chocolate lovers, this pie requires chilling time to develop its signature creamy texture and an indulgent chocolate flavor.

Ingredients

Crust

  • 20 Oreo (230 grams) cookies (regular-stuffed, keep filling intact)
  • 3 tablespoons unsalted butter, melted

Filling

  • 1 1/3 cups (266 grams) granulated sugar
  • 4 large eggs
  • 8 ounces (227 grams) bittersweet baking chocolate, melted
  • 2 teaspoons vanilla extract
  • 10 tablespoons (142 grams) unsalted butter, at room temperature
  • 1 1/3 cups heavy cream, cold
  • 4 teaspoons powdered sugar

Topping

  • 1 cup heavy cream, cold
  • 2 tablespoons powdered sugar
  • 1 teaspoon vanilla extract
  • Chocolate shavings or cocoa powder, for garnish if desired

Instructions

  1. Make the crust: Preheat your oven to 350°F (175°C) and spray a 9-inch deep pie dish with cooking spray. Place the Oreo cookies into a food processor and pulse until finely ground. Add melted butter and pulse again until the mixture is moistened. Press this evenly into the bottom and up the sides of the prepared pie dish. Bake for 10 minutes or until the crust is fragrant and set. Remove from the oven and let cool completely on a wire rack.
  2. Prepare the filling base: In a small saucepan, whisk together the granulated sugar and eggs. Set over medium-low heat and cook, whisking constantly to prevent curdling, until the mixture reaches 160°F (71°C) and coats the back of a metal spoon. Remove from heat immediately.
  3. Add chocolate and vanilla: Stir the melted bittersweet chocolate and vanilla extract into the warm egg-sugar mixture until fully combined and smooth. Transfer this mixture to a larger stainless-steel pan to cool faster, stirring occasionally until it reaches room temperature (around 75°F or 24°C).
  4. Beat the butter: Using an electric mixer, beat the room temperature butter until light and fluffy, about 2 to 3 minutes. Gradually add the cooled chocolate mixture and beat on high speed for 5 minutes until the batter becomes light and fluffy.
  5. Whip the cream for filling: In a separate clean bowl, beat the cold heavy cream until it starts to thicken. Add powdered sugar and continue beating until stiff peaks form. Gently fold this whipped cream into the chocolate-butter mixture to create a silky, airy filling.
  6. Assemble and chill: Pour the filling into the cooled crust, smoothing the top evenly. The pie will have a tall filling layer. Refrigerate the pie for at least 6 hours to allow it to set firmly. It can be stored covered in the fridge for up to 2 days ahead.
  7. Prepare the topping: Beat the cold heavy cream, powdered sugar, and vanilla extract on high speed until stiff peaks form. Spread or pipe this whipped cream over the chilled pie.
  8. Garnish: Decorate the pie with chocolate shavings or dust lightly with cocoa powder as desired. Serve chilled and enjoy this luxuriously smooth and creamy French Silk Pie.

Notes

  • Ensure the egg mixture reaches 160°F to cook the eggs safely and avoid foodborne illness.
  • Use a good-quality bittersweet chocolate for deep, rich flavor.
  • Keep the butter at room temperature for easier beating and better texture.
  • Chilling time is critical to set the pie properly; do not rush this step.
  • For best results, beat the cream just before topping to ensure it's fresh and fluffy.
  • Store the pie covered in the refrigerator and consume within 2 days.
  • You can substitute Oreo cookies with another chocolate cookie crust if preferred.
