  • 2 pounds fresh or frozen cherries, pitted
  • ¼ cup (39g) pure maple syrup
  • 1 tablespoon cornstarch (or arrowroot starch)
  • 1 tablespoon amaretto (optional, but recommended)
  • 1 teaspoon vanilla extract
  • ½ teaspoon almond extract


Instructions

  1. Preheat the Oven: Set your oven to 350°F (175°C) and grease a 10-inch oven-safe skillet or a 9x9 inch baking pan with nonstick cooking spray to prevent sticking.
  2. Make the Topping: In a medium bowl, combine the flour, brown sugar, sliced almonds (if using), and rolled oats. Pour in the melted butter and stir with a fork until the mixture forms clumps resembling wet sand. Use your hands if needed to create larger crumble clumps. Cover and chill in the refrigerator for 5 minutes while you prepare the filling.
  3. Prepare the Cherry Filling: Place the pitted cherries directly into your prepared pan. Add maple syrup, cornstarch, amaretto (if using), vanilla extract, and almond extract.
