Description

A fresh and vibrant chopped salad featuring cucumbers, tomatoes, red onion, olives, and creamy feta cheese, tossed in a simple lemon-olive oil dressing. Ready in just 10 minutes, this Mediterranean-inspired salad is perfect as a light meal or a refreshing side dish.

Ingredients

Salad Ingredients

  • 1 large English cucumber, chopped into small cubes
  • 4 large tomatoes or 4 cups cherry tomatoes, chopped into small cubes
  • 1 large red onion, chopped into small cubes
  • 7 oz (200g) Greek feta cheese, cut into small cubes
  • 1 cup pitted olives, chopped into small pieces

Dressing Ingredients

  • Juice of 1-2 lemons
  • 2 tbsp olive oil
  • Salt to taste
  • Black pepper to taste

Optional Garnish

  • Fresh parsley, chopped

Instructions

  1. Chop the Ingredients: Finely chop the cucumber, tomatoes, red onion, olives, and feta cheese into small, uniform cubes. Combine them in a large salad bowl to prepare the base of the salad.
  2. Prepare the Dressing: In a separate small bowl, squeeze the juice from 1 to 2 lemons, add 2 tablespoons of olive oil, and season with salt and black pepper to taste. Whisk the ingredients together until well combined.
  3. Toss the Salad: When ready to serve, pour the lemon-olive oil dressing over the chopped salad ingredients and mix thoroughly to ensure even coating of the dressing.
  4. Garnish and Serve: Optionally, sprinkle chopped fresh parsley over the salad for added flavor and color, then serve immediately to enjoy the fresh, vibrant flavors.

Notes

  • Use ripe, firm tomatoes for the best texture and flavor.
  • Adjust lemon juice and olive oil quantities according to your taste preference.
  • Chilling the salad for 10-15 minutes before serving can enhance the flavors.
  • For a vegan version, omit the feta cheese or substitute with a plant-based cheese alternative.
  • This salad is best served fresh but can be refrigerated up to 24 hours in an airtight container.
