Description

These Garlic Lemon and Parmesan Roasted Brussel Sprouts are a flavorful and easy side dish. Brussels sprouts are tossed with minced garlic, olive oil, and fresh lemon juice, then roasted until golden and tender. Finished with a sprinkle of freshly grated Parmesan cheese and an extra spritz of lemon juice, this dish perfectly balances savory, tangy, and cheesy notes for a deliciously satisfying vegetable side.

Ingredients

Vegetables

  • 1 lb brussels sprouts, rinsed and dried, ends trimmed, sliced in half lengthwise

Seasonings & Oils

  • 2 - 3 cloves garlic, minced
  • 2 Tbsp extra virgin olive oil
  • 2 tsp fresh lemon juice, plus more for serving
  • 1/2 tsp (scant) fine sea salt, or to taste
  • 1/4 tsp freshly ground black pepper

Cheese

  • 1/4 cup freshly grated parmesan cheese

Instructions

  1. Preheat Oven and Prepare Brussels Sprouts: Preheat your oven to 400 degrees Fahrenheit. In a large mixing bowl, combine the halved brussels sprouts and minced garlic.
  2. Toss with Oil, Lemon Juice, and Seasonings: Drizzle the brussels sprouts and garlic with extra virgin olive oil and fresh lemon juice. Sprinkle with sea salt and freshly ground black pepper. Toss everything thoroughly to ensure even coating.
  3. Arrange on Baking Sheet: Spread the coated brussels sprouts out in a single, even layer on a cookie sheet. Ensuring they are spread out helps them roast evenly.
  4. Roast Until Golden Brown: Place the cookie sheet in the preheated oven and bake the brussels sprouts for 25 to 30 minutes. Halfway through baking, toss the sprouts to promote even browning. Roast until the edges are golden brown and the sprouts are tender.
  5. Finish with Lemon Juice and Parmesan: Remove the roasted brussels sprouts from the oven. While still warm, spritz with additional lemon juice to taste and sprinkle generously with freshly grated Parmesan cheese. Serve immediately for best flavor.

Notes

  • For even cooking, make sure the brussels sprouts are roughly the same size by trimming and halving them uniformly.
  • Use freshly grated Parmesan cheese for optimal flavor and texture.
  • If you prefer a stronger lemon flavor, feel free to add more fresh lemon juice before serving.
  • To make this dish vegan, omit the parmesan or substitute with a plant-based cheese alternative.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 3 days and reheated in a skillet or oven to retain crispness.
