Ingredients
Sauce
- 3⅓ tbsp light brown sugar
- 3⅓ tbsp oyster sauce
- 3⅓ tsp light soy sauce
- 1¼ tsp sesame oil
- 1⅔ tsp salt (adjust to taste)
Noodles
- 16 oz fresh Chinese-style egg noodles or 8 oz dried spaghetti
Aromatics and Others
- 5⅓ tbsp salted butter
- 1 bunch green onions
- 20 cloves garlic, minced
Instructions
- Prepare the sauce: In a bowl, mix together light brown sugar, oyster sauce, light soy sauce, sesame oil, and salt until fully combined. Set this sauce mixture aside for later use.
- Cook the noodles: Bring a large pot of water to a boil. Add the fresh egg noodles or dried spaghetti to the boiling water and cook according to package instructions until al dente. Drain the noodles thoroughly and set them aside.
- Prepare aromatics: Slice the green onions into thin pieces and mince the garlic cloves finely to maximize their flavor release during cooking.
- Melt the butter: Heat a large pan or skillet over medium-high heat. Add the salted butter and allow it to melt completely. Optionally, let the butter brown slightly to develop a nuttier flavor, being careful not to burn it.
- Sauté aromatics: Add the minced garlic and three-quarters of the sliced green onions to the melted butter. Stir and sauté until the garlic is fragrant and lightly browned, which should take a couple of minutes. This step infuses the butter with robust garlic flavor.
- Add sauce and noodles: Turn the heat down to low. Pour in the prepared sauce mixture and stir to combine with the garlic and green onions. Add the drained noodles to the pan and toss well to coat each strand evenly with the sauce. Warm the noodles through as you toss for about 2-3 minutes.
- Season and adjust: Taste the noodles and adjust salt if necessary to ensure the perfect balance of flavors.
- Garnish and serve: Transfer the garlic noodles to serving plates and sprinkle the remaining green onions on top for freshness and a mild onion crunch. Serve the dish hot for best taste and texture.
Notes
- For best results, use fresh Chinese-style egg noodles, but dried spaghetti works as a convenient substitute.
- You can brown the butter slightly to add a deeper, nuttier flavor to the dish, but watch carefully to prevent burning.
- Adjust salt to taste since oyster sauce and soy sauce already contain sodium.
- For a spicier variation, add chili flakes or finely chopped fresh chilies during the garlic sauté step.
- To make it vegetarian, substitute oyster sauce with vegetarian mushroom sauce or hoisin sauce.
- Serve immediately for optimal texture, as noodles can clump if left to sit too long.
