Description

Ingredients

  • 2 lbs Yukon Gold or Russet potatoes, cut into -inch chunks
  • 3 tbsp olive oil
  • 4 cloves garlic, minced or finely grated
  • 1 tsp salt (or to taste)
  • ½ tsp black pepper
  • 1 tsp fresh or dried rosemary or thyme (optional)
  • 2 tbsp chopped fresh parsley (optional, for garnish)

Instructions
