- 2 pints cherry tomatoes, halved
- 5 garlic cloves, minced
- 2 teaspoons dried Italian seasoning
- 1 teaspoon kosher salt
- 1/2 teaspoon black pepper
- 2 tablespoons olive oil
Spinach
- 2 cups spinach
- 2 tablespoons olive oil
Flatbread Toppings
- 3-4 cups shredded mozzarella cheese
- 4 flatbreads (packaged naan recommended)
- 1/2 teaspoon red pepper flakes
- fresh basil for garnish
Instructions
- Preheat Oven for Tomatoes: Set your oven to 300°F (150°C). Line a baking sheet with parchment paper to prepare for roasting the tomatoes.
- Prepare Tomatoes: In a large mixing bowl, gently combine the halved cherry tomatoes, minced garlic, Italian seasoning, 2 tablespoons olive oil, kosher salt, and black pepper to evenly coat the tomatoes with flavor.
- Roast Tomatoes: Spread the seasoned tomatoes evenly on the prepared baking sheet. Roast in the oven for 1 hour or until the tomatoes have softened and release a rich, fragrant aroma.
- Preheat Oven or Grill for Flatbread: Increase the oven temperature to 425°F (220°C) or prepare your grill for high heat to bake the flatbread later.
- Sauté Spinach: Heat 2 tablespoons of olive oil in a skillet over medium heat. Add the spinach and sauté for 1 to 2 minutes until wilted. Remove from heat and set aside.
- Assemble Flatbreads: Lay out the flatbreads on a baking sheet. Evenly spread shredded mozzarella over each flatbread. Distribute the roasted tomatoes and sautéed spinach on top, then sprinkle with red pepper flakes for a gentle kick.
- Bake Flatbreads: Place the assembled flatbreads in the oven or on the grill. Bake for 9 to 10 minutes until the cheese is melted, bubbly, and the edges of the flatbread are browned and slightly crisp.
- Garnish and Serve: Remove the flatbreads from heat and garnish with fresh basil leaves. Slice and serve warm, enjoying the vibrant flavors and textures.
Notes
- You can substitute flatbreads with pizza bases or pita for variation.
- Adjust the amount of red pepper flakes to control the spice level.
- For a gluten-free option, use gluten-free flatbreads or crackers.
- The roasted tomatoes can be made a day ahead and refrigerated to enhance the flavors.
- If fresh basil is not available, dried basil or parsley can be used as a garnish.
- To save time, use pre-minced garlic or garlic powder, but fresh garlic provides the best flavor.
