Description

A quick and flavorful Garlic Shrimp Stir-Fry featuring tender shrimp sautéed with sweet red peppers, onions, and aromatic basil, finished with a light chicken broth sauce. Perfectly served over your choice of rice, this stir-fry offers a delicious and easy meal in just 35 minutes.

Ingredients

Shrimp and Vegetables

  • 1 pound uncooked medium shrimp, peeled and deveined
  • 1 cup julienned sweet red pepper
  • 1 cup thinly sliced red or white onion
  • 3 tablespoons minced green onion
  • Optional: 2 cups fresh snow peas

Seasonings and Sauces

  • 4 garlic cloves, minced
  • 2 tablespoons butter or stick margarine
  • 1 tablespoon dried basil
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/4 cup chicken broth

Instructions

  1. Prepare Rice: Cook your preferred type of rice according to package instructions to serve as a base for the stir-fry.
  2. Sauté Garlic: In a large skillet, melt the butter over medium heat and sauté the minced garlic for about 2 minutes until fragrant but not browned.
  3. Add Main Ingredients: Add the shrimp, optional snow peas, julienned red pepper, sliced onion, dried basil, salt, and pepper to the skillet. Stir to combine all ingredients evenly.
  4. Stir-Fry: Cook the mixture while stirring frequently for about 5 minutes, until the shrimp turn pink and opaque and the vegetables are crisp-tender.
  5. Add Broth and Green Onions: Pour in the chicken broth and cook for an additional minute to heat the broth through, then add the minced green onions and toss gently to combine flavors.
  6. Serve: Spoon the garlic shrimp stir-fry over the prepared rice and serve immediately for a warm and flavorful meal.

Notes

  • Optionally, add 2 cups of fresh snow peas with the vegetables for extra crunch and sweetness.
  • Use margarine or butter based on dietary preference or availability.
  • Serve immediately to enjoy the shrimp at their best texture.
  • Can be paired with brown rice or cauliflower rice for a healthier twist.
  • Adjust salt and pepper to taste depending on dietary needs.
