Description
This Greek Yogurt Chicken Salad is a healthy and delicious twist on the classic chicken salad, using protein-packed nonfat Greek yogurt instead of mayonnaise for a lighter, tangy flavor. It's loaded with tender shredded chicken, crisp celery, sweet apples, crunchy pecans, and fresh parsley, making it perfect for a quick lunch or a satisfying sandwich filling.
Ingredients
Chicken
- 2.5 cups cooked shredded chicken (about 1 lb)
Dressing & Spices
- 1/2 cup plain nonfat Greek yogurt
- ¼ teaspoon garlic powder
- 1/4 teaspoon black pepper
- 1/4 teaspoon salt
Vegetables & Fruits
- 1 tablespoon fresh parsley, chopped finely
- 1/2 cup celery, diced finely
- 1 cup apples, chopped
Nuts
- 1/4 cup pecans, chopped
Instructions
- Cook the chicken: Bring a pot of water to a boil and add the chicken. Boil for 10-14 minutes until fully cooked. Alternatively, you can prepare the chicken using an Instant Pot, crockpot, or use pre-cooked rotisserie chicken for convenience.
- Prepare the mix-ins: While the chicken is cooking, finely chop the fresh parsley, dice the celery, chop the apples, and chop the pecans.
- Shred the chicken: Once the chicken is cooked, drain and allow to cool slightly. Use two forks to pull the chicken apart into shredded pieces.
- Combine ingredients: In a large mixing bowl, add the shredded chicken, chopped parsley, celery, apples, pecans, garlic powder, black pepper, salt, and Greek yogurt.
- Mix thoroughly: Use a spatula or spoon to toss all ingredients together until the chicken and mix-ins are evenly coated with the Greek yogurt dressing.
- Serve: Serve your Greek Yogurt Chicken Salad as a sandwich filling, on top of fresh greens as a salad, or enjoy as a protein-packed snack.

- To save time, use pre-cooked chicken such as rotisserie or packaged shredded chicken.
