Description

This Greek Yogurt Chicken Salad is a healthy and delicious twist on the classic chicken salad, using protein-packed nonfat Greek yogurt instead of mayonnaise for a lighter, tangy flavor. Ingredients

Chicken

  • 2.5 cups cooked shredded chicken (about 1 lb)

Dressing & Spices

  • 1/2 cup plain nonfat Greek yogurt
  • ¼ teaspoon garlic powder
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon salt

Vegetables & Fruits

  • 1 tablespoon fresh parsley, chopped finely
  • 1/2 cup celery, diced finely
  • 1 cup apples, chopped

Nuts

  • 1/4 cup pecans, chopped


Instructions

  1. Cook the chicken: Bring a pot of water to a boil and add the chicken. Boil for 10-14 minutes until fully cooked. Alternatively, you can prepare the chicken using an Instant Pot, crockpot, or use pre-cooked rotisserie chicken for convenience.
  2. Prepare the mix-ins: While the chicken is cooking, finely chop the fresh parsley, dice the celery, chop the apples, and chop the pecans.
  3. Shred the chicken: Once the chicken is cooked, drain and allow to cool slightly. Use two forks to pull the chicken apart into shredded pieces.
