Wet Ingredients

Instructions

  1. Prepare the granola: If using crunchy granola, cut it into small pieces to distribute the texture evenly in the waffles. Soft or chewy granola can be crumbled or cut similarly. Choose based on your preference.
  2. Preheat the waffle iron: Before mixing the batter, preheat your waffle iron to ensure it will bake the waffles evenly and crisp.
  3. Combine dry ingredients: In a bowl, mix together the all-purpose flour, salt, baking soda, baking powder, sugar, and prepared granola. Set aside.
  4. Mix wet ingredients: In a large mixing bowl, whisk together eggs, Greek yogurt, milk, oil, and vanilla extract until fully combined.
  5. Incorporate dry ingredients: Fold the dry ingredients into the wet mixture gently using a spatula. The batter will be thick and lumpy—mix only until no flour pockets remain to avoid overmixing, which can make waffles tough.
  6. Cook the waffles: Spray the hot waffle iron lightly with non-stick spray. Scoop about a heaping 1/3 cup of batter onto the waffle iron. Close and bake for 5-6 minutes or until the waffles turn crisp and golden.
