Description

This Grilled Chicken with Mango Avocado Salsa is a vibrant, healthy dish perfect for a quick and flavorful meal. Tender chicken breasts are seasoned with chili powder and grilled to perfection, then topped with a refreshing salsa made from ripe mango, creamy avocado, red bell pepper, cilantro, and fresh lime juice. Ready in just 15 minutes, this recipe offers a delightful combination of smoky, spicy, and fresh flavors that is sure to impress.

Ingredients

For the Chicken

  • 4 thin boneless skinless chicken breasts
  • 2 teaspoons olive oil (or avocado oil)
  • 2 teaspoons chili powder
  • Salt to taste

For the Mango Avocado Salsa

  • 1 cup diced mango
  • 1 cup diced avocado
  • 1 lime, juiced
  • 1/2 cup minced red bell pepper
  • 1/4 cup chopped cilantro
  • Salt to taste

Instructions

  1. Prepare the salsa: In a medium bowl, combine the diced mango, diced avocado, minced red bell pepper, and chopped cilantro. Stir in the freshly squeezed lime juice and salt to taste. Mix gently to combine, then set the salsa aside to allow the flavors to meld.
  2. Season the chicken: Preheat your grill to medium-high heat. Drizzle the chicken breasts with olive oil, ensuring each piece is well coated. Sprinkle the chili powder evenly over both sides of the chicken breasts along with salt to taste.
  3. Grill the chicken: Place the chicken breasts on the heated grill. Cook for 4 to 5 minutes on each side, or until the internal temperature reaches 165°F (75°C) and the chicken is cooked through with nice grill marks.
  4. Serve: Once grilled, transfer the chicken to serving plates, spoon the prepared mango avocado salsa generously over the top, and serve immediately while hot and fresh.

Notes

  • For juicier chicken, marinate the chicken breasts in the olive oil and chili powder for 15-30 minutes before grilling.
  • If you don’t have a grill, you can cook the chicken on a grill pan or stovetop skillet over medium-high heat.
  • Adjust the chili powder to suit your preferred spice level.
  • Serve with a side of rice, quinoa, or a fresh green salad for a complete meal.
  • Ensure the avocado is ripe but firm to avoid mushy salsa.
