Ingredients
Chicken
- 4 pounds boneless skinless chicken thighs or chicken breasts
Marinade
- 1 cup unsweetened pineapple juice
- ½ cup soy sauce
- ½ cup brown sugar
- ⅓ cup ketchup
- ¼ cup chicken broth
- 2 teaspoons freshly grated ginger
- 1 ½ teaspoons minced garlic
Garnish
- Sliced green onions
Instructions
- Prepare the Marinade: Whisk together 1 cup of unsweetened pineapple juice, ½ cup soy sauce, ½ cup brown sugar, ⅓ cup ketchup, ¼ cup chicken broth, 2 teaspoons freshly grated ginger, and 1 ½ teaspoons minced garlic in a medium bowl until well combined.
- Marinate the Chicken: Reserve 1 cup of the marinade for basting later. Place the remaining marinade and 4 pounds of boneless skinless chicken thighs into a ziplock bag. Seal and refrigerate the chicken to marinate for at least 3 hours or overnight to allow the flavors to infuse thoroughly.
- Preheat the Grill: After marinating, preheat your grill to medium heat. Ensure the grill grates are clean and lightly oiled to prevent sticking.
- Grill the Chicken: Place the marinated chicken on the grill. Grill with the lid closed for about 6-8 minutes on each side, or until the chicken is no longer pink inside and reaches an internal temperature of 165°F (74°C) for food safety.
- Baste While Grilling: During the last 5 minutes of grilling, baste the chicken occasionally with the reserved marinade to enhance the flavor and keep the meat moist.
- Serve: Once cooked, remove the chicken from the grill and garnish with sliced green onions if desired. Serve hot and enjoy your flavorful Grilled Huli Huli Chicken.
Notes
- Marinate the chicken overnight for deeper flavor infusion.
- Use a meat thermometer to ensure chicken is safely cooked to 165°F.
- Can substitute chicken breasts but thighs remain juicier.
- Adjust sugar quantity to taste for a sweeter or less sweet marinade.
- Leftover marinade can be boiled and used as a sauce.
- Grilling time may vary depending on grill type and thickness of chicken.
