Description

These Grilled Shrimp Skewers are a quick and flavorful seafood dish perfect for summer grilling. Marinated in a zesty mix of olive oil, lemon juice, garlic, and smoky spices, the shrimp cook rapidly on the grill to a juicy, tender finish. Ideal for a healthy weeknight dinner or entertaining guests, these skewers deliver a perfect balance of smoky and tangy flavors with minimal effort.

Ingredients

Skewers

  • 8 Bamboo skewers

Marinade

  • 1/4 cup Olive oil
  • 1 tbsp Lemon juice
  • 4 cloves Garlic (minced)
  • 1 tsp Italian seasoning
  • 1/2 tsp Smoked paprika
  • 1/2 tsp Sea salt
  • 1/4 tsp Black pepper

Main Ingredient

  • 1 lb Large shrimp (31/40 size, peeled and deveined)

Instructions

  1. Prepare Skewers: If using bamboo skewers, soak them in water for 30-60 minutes before grilling to prevent them from burning during cooking.
  2. Make Marinade: In a large bowl, whisk together olive oil, lemon juice, minced garlic, Italian seasoning, smoked paprika, sea salt, and black pepper until well combined.
  3. Marinate Shrimp: Add the peeled and deveined shrimp to the marinade and gently toss to coat all the shrimp evenly. Let them marinate for 15-30 minutes, ensuring they do not exceed this time to avoid a mushy texture.
  4. Preheat Grill: While shrimp marinates, preheat your grill for about 15 minutes over medium-high heat. If using a grill pan, heat it for 3-5 minutes.
  5. Skewer Shrimp: Remove shrimp from the marinade and thread them carefully onto the soaked bamboo skewers, spreading them evenly.
  6. Grill Shrimp: Place the shrimp skewers on the preheated grill and cook for 2-3 minutes until the shrimp are pink and opaque on the bottom but slightly translucent on top. Flip the skewers and grill for another 2-3 minutes until shrimp are fully opaque and cooked through.

Notes

  • Soaking bamboo skewers helps prevent them from burning on the grill.
  • Do not over-marinate shrimp to avoid a mushy texture; 15-30 minutes is optimal.
  • If you don’t have a grill, a grill pan or stovetop skillet can be used as an alternative.
  • Shrimp cook quickly, so watch carefully to avoid overcooking which can make them tough.
  • Serve immediately for best flavor and texture.
