Ingredients
Beef and Vegetables
- 1 pound lean ground beef
- 1 tablespoon avocado oil (or olive oil)
- ½ pound snap peas
- 1 red bell pepper, thinly sliced
- 4 green onions, thinly sliced on the diagonal
- 3 cloves garlic, minced
- 2 teaspoons fresh ginger, grated
Sauce
- ¼ cup low-sodium soy sauce
- 2 tablespoons oyster sauce
- 1 tablespoon rice vinegar
- 1 tablespoon honey
- 1 teaspoon sesame oil
- 1 tablespoon cornstarch
- 2 tablespoons water

- Sesame seeds
- Extra sliced green onions
Instructions
- Cook Ground Beef: Heat 1 tablespoon avocado oil in a large skillet or wok over medium-high heat. Add 1 pound lean ground beef and cook for 5 to 6 minutes, breaking it into small crumbles until browned. Drain excess fat, leaving about a tablespoon in the pan for flavor.
- Sauté Aromatics: Stir in minced garlic and grated fresh ginger; cook for approximately 30 seconds until fragrant.
- Cook Bell Pepper and Onion Whites: Add sliced red bell pepper and the white parts of the green onions. Cook for 3 to 4 minutes, stirring frequently, until vegetables are crisp-tender.
- Add Snap Peas and Onion Greens: Stir in green parts of the green onions and snap peas. Cook for another 1 to 2 minutes.
- Prepare Sauce: In a small bowl, whisk together low-sodium soy sauce, oyster sauce, rice vinegar, honey, sesame oil, cornstarch, and water until smooth.
- Combine Sauce and Stir Fry: Pour the sauce into the skillet, stir continuously for 1 to 2 minutes until the sauce thickens into a glossy coating over the beef and vegetables.
- Garnish: Remove from heat and sprinkle with sesame seeds and extra sliced green onions.
- Serve: Serve immediately over steamed rice, brown rice, quinoa, or noodles as desired.
