  • 1/3 cup melted & cooled coconut oil or avocado oil
  • 1 1/4 cups almond flour

  • 1/4 cup monk fruit sweetener (or other granulated sweetener like coconut sugar)
  • 1/2 tbsp baking powder

Instructions

  1. Preheat and Prepare: Preheat your oven to 350°F (175°C). Grease a muffin tin thoroughly to prevent sticking.
  2. Combine Ingredients: In a food processor or blender, blend together the eggs, cottage cheese, melted and cooled coconut or avocado oil, almond flour, protein powder, maple syrup, monk fruit sweetener, baking powder, lemon juice, vanilla extract, and sea salt until fully combined with no chunks.
  3. Fold in Add-ins: Gently fold in any desired add-ins like fresh berries or chocolate chips. If using frozen berries, chop them finely to reduce excess moisture which can affect the baking texture.
  4. Portion Batter: Divide the batter evenly among the greased muffin tin cups, making about 8 muffins.
  5. Bake: Bake in the preheated oven for 20-25 minutes until the tops feel firm and a toothpick inserted in the center comes out clean. Start checking around 20 minutes to avoid over-baking and drying out the muffins. If frozen berries are used, additional baking time may be needed.
