Ingredients
Main Ingredients
- 1 cup cottage cheese
- 1 medium red bell pepper
- 1 garlic clove
- 1 tsp smoked paprika
- Olive oil (for drizzling over the pepper)
- 1/4 tsp salt
- Black pepper (to taste)
Instructions
- Roast the red pepper: Drizzle the red bell pepper lightly with olive oil. Roast it in an air fryer or oven at 400°F (200°C) for 15–18 minutes, until it becomes soft and the skin is blistered and slightly charred. If using a conventional oven, place it on a baking sheet and roast for about 20–25 minutes, turning halfway through.
- Let it cool and peel: Allow the roasted pepper to cool for a few minutes, then peel off its skin. Remove the seeds and stem, and set the peeled pepper aside.
- Blend it up: Add the cottage cheese, smoked paprika, roasted red pepper, garlic clove, salt, and black pepper into a blender or food processor. Blend everything together until smooth and creamy, taking about one minute.
- Plate and finish: Transfer the dip into a serving bowl. Optionally, garnish with extra smoked paprika, chili flakes, and chopped chives for added flavor and presentation.
- Serve it up: Enjoy this dip with crunchy vegetables like cucumber and carrot sticks, mini toasts, or crackers. It complements a wide variety of snacks and dishes.
Notes
- You can roast the red pepper in either an air fryer or a conventional oven, depending on your equipment.
- Peeling the roasted pepper after cooling helps achieve a smoother texture and better flavor.
- Adjust the smoky paprika, salt, and black pepper amounts according to your taste preferences.
- For a spicier kick, add chili flakes directly into the dip before blending.
- This dip can be stored in an airtight container in the refrigerator for up to 3 days.
