Instructions

If using a conventional oven, place it on a baking sheet and roast for about 20–25 minutes, turning halfway through.
  2. Let it cool and peel: Allow the roasted pepper to cool for a few minutes, then peel off its skin. Remove the seeds and stem, and set the peeled pepper aside.
  3. Blend it up: Add the cottage cheese, smoked paprika, roasted red pepper, garlic clove, salt, and black pepper into a blender or food processor. Blend everything together until smooth and creamy, taking about one minute.
  4. Plate and finish: Transfer the dip into a serving bowl. Optionally, garnish with extra smoked paprika, chili flakes, and chopped chives for added flavor and presentation.
