Ingredients
Yogurt Mixture
- 1/2 cup Greek yogurt (full fat)
- 1/4 cup powdered peanut butter (like PB Fit, PB2)
- 1 tablespoon creamy peanut butter
- 1/2 tablespoon maple syrup
Chocolate Coating
- 1/2 cup dark chocolate chips (such as Lily’s)
- 1 teaspoon coconut oil
Topping (Optional)
- Flaky sea salt for topping
Instructions
- Prepare the Yogurt Mixture: In a mixing bowl, combine the Greek yogurt, powdered peanut butter, creamy peanut butter, and maple syrup. Stir thoroughly until the mixture is smooth and the ingredients are well incorporated, ensuring an even flavor throughout.
- Form and Freeze the Bites: Line a plate or a small baking tray with parchment paper. Using a medium cookie scoop or spoon, portion the yogurt mixture into about 6 small bites. Place them on the parchment and freeze for 10-20 minutes, or until they are solid and firm to the touch.
- Melt the Chocolate for Coating: While the yogurt bites are freezing, melt the dark chocolate chips together with the coconut oil. You can use a microwave in short bursts, stirring in between, or melt them gently using a double boiler method until the mixture is fully smooth and glossy.
- Dip and Set the Chocolate-Coated Bites: Once the yogurt bites are completely frozen and firm, dip each one into the melted chocolate to coat fully. Immediately sprinkle with flaky sea salt if desired. Place the coated bites on a clean tray and transfer them to the fridge to allow the chocolate to set completely.
- Serve and Store: After the chocolate coating has hardened, your yogurt bites are ready to enjoy. Store any leftovers in an airtight container in the refrigerator for 3-4 days to maintain freshness and texture.
Notes
- For best results, use full-fat Greek yogurt for creaminess and flavor.
- Use powdered peanut butter to reduce fat content while maintaining peanut flavor.
- Dark chocolate chips like Lily’s are preferred for their lower sugar content and rich flavor.
- Flaky sea salt is optional but enhances the chocolate flavor nicely.
- Store the bites in the fridge, not at room temperature, to prevent melting.
