Ingredients
Strawberries
- 2 cups crushed fresh strawberries (about 1 quart)
Sugar
- 4 cups granulated sugar
Fruit Pectin Mixture
- 1.75 ounce fruit pectin (Sure-Jell recommended)
- ¾ cup water
Instructions
- Prepare Jars: Wash and sterilize mason jars and lids by boiling them in water or running through the dishwasher’s sterilization cycle to ensure they are clean and safe for storing jam.
- Prep Strawberries: Rinse strawberries thoroughly, remove stems, and slice into halves or quarters if desired to facilitate easier crushing.
- Crush Strawberries: Use a potato masher to crush the strawberries until you have very small pieces. Avoid pureeing to keep some texture in the jam.
- Measure Strawberries: Precisely measure 2 cups of crushed strawberries along with their juice and place them into a large mixing bowl.
- Add Sugar: Mix 4 cups of granulated sugar into the crushed strawberries and set the mixture aside to macerate.
- Prepare Pectin Mixture: In a small saucepan, combine the entire 1.75-ounce package of fruit pectin with ¾ cup water and stir thoroughly.
- Cook Pectin: Heat the mixture over medium-high heat, stirring constantly until it comes to a boil. Keep boiling and stirring for 1 minute to activate the pectin.
- Combine Mixtures: Quickly pour the boiling pectin mixture into the strawberry and sugar mixture, stirring until nearly all sugar granules dissolve. This ensures a smooth jam consistency.
- Fill Jars: Immediately ladle the jam into the prepared sterilized jars and secure the lids without over-tightening.
- Set Jam: Allow the jam to set at room temperature for 24 hours to thicken properly.
- Store Jam: After 24 hours, tighten the lids completely and store the jars in the refrigerator or freezer to preserve freshness until ready to use.
Notes
- Using fresh, ripe strawberries will yield the best flavor and natural sweetness.
- Ensure precise measurement of fruit and sugar to guarantee proper jam consistency.
- Do not puree the strawberries if you prefer jam with texture; crushing is preferred.
- Jam should be stored in the refrigerator or freezer since it is not processed by traditional canning methods.
- If storing in the freezer, allow jam to thaw in the refrigerator before serving for best texture.
- Sterilizing jars properly is essential to prevent spoilage when storing in the fridge or freezer.
