Description
Delicious honey roasted carrots featuring tender chunks of carrots coated in a buttery honey glaze with a hint of cayenne and fresh herbs, roasted to perfection for a sweet and savory side dish.
Ingredients
Carrots
- 2 lbs. carrots, peeled and cut into 2-inch chunks
Seasoning & Glaze
- 2 tablespoons extra virgin olive oil
- ½ teaspoon kosher salt
- ¼ teaspoon fresh ground black pepper
- 3 tablespoons butter
- 3 tablespoons honey
- ⅛ teaspoon cayenne pepper
- ½ tablespoon fresh thyme or fresh parsley
Instructions
- Preheat Oven: Preheat your oven to 425 degrees Fahrenheit to prepare for roasting the carrots.
- Prepare Carrots: In a large bowl, toss the peeled and cut carrots with extra virgin olive oil, kosher salt, and freshly ground black pepper until evenly coated. Spread them out on a large baking sheet lined with parchment paper in a single layer.
- Roast Carrots: Place the baking sheet in the preheated oven and roast the carrots for about 20 minutes or until they are fork-tender and slightly caramelized, stirring once halfway through for even cooking.
- Make Honey Glaze: While the carrots are roasting, melt the butter in a large saucepan over medium-low heat. Add the honey and cayenne pepper, stirring constantly and cooking for several minutes to blend the flavors and create a smooth glaze.
- Toss Carrots in Glaze: Once the carrots are roasted, add them directly to the saucepan with the honey-butter glaze and stir to coat every piece thoroughly.
- Finish and Serve: Sprinkle the glazed carrots with fresh thyme or parsley, adjust seasoning with additional salt and pepper if desired, then serve warm as a flavorful side dish.
Notes
- Cutting carrots into uniform 2-inch chunks ensures even roasting.
- Use parchment paper on the baking sheet for easier cleanup and to prevent sticking.
- The cayenne pepper adds just a touch of heat; adjust to taste or omit if preferred.
- Fresh thyme or parsley adds a bright herbaceous finish but can be substituted with other herbs if desired.
- Be careful not to overcook carrots to maintain a slight bite and avoid mushiness.
