Description

These Instant Pot Meatloaf Bites are a quick and easy twist on traditional meatloaf, cooked using an egg bite mold for perfect individual portions. Tender and flavorful, they combine a blend of seasonings, Worcestershire sauce, and Dijon mustard, steamed to juicy perfection in the Instant Pot, then finished under the broiler with a tangy ketchup and apple cider vinegar glaze.


Ingredients

Meatloaf Mixture

  • 15 saltine crackers, crushed
  • 3 Tbsp milk
  • 1 Tbsp dried parsley
  • 1 egg
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 ½ tsp Dijon mustard
  • 1 ½ Tbsp Worcestershire sauce
  • ¾ tsp kosher salt
  • ¼ tsp black pepper
  • 1 pound lean ground meat (beef, chicken, or turkey)

Glaze

  • ¼ cup ketchup
  • 2 tsp apple cider vinegar


Instructions

  1. Prepare Meatloaf Mixture: In a large bowl, combine crushed saltine crackers, milk, dried parsley, egg, onion powder, garlic powder, Dijon mustard, Worcestershire sauce, kosher salt, black pepper, and the ground meat. Mix thoroughly using clean or gloved hands until all ingredients are evenly incorporated.
  2. Fill Egg Bite Mold: Lightly spray the egg bite mold with non-stick spray. Scoop about 1/3 cup of the meat mixture into each mold cup, filling each to the top, allowing for slight overflow.
  3. Set Up Instant Pot: Loosely cover the filled mold with aluminum foil. Pour 1 ½ cups of water into the bottom of the Instant Pot liner. Place the metal trivet inside, then carefully lower the covered mold onto the trivet.
  4. Pressure Cook: Secure the Instant Pot lid and set the valve to the sealing position. Select the manual or pressure cook function and set the timer for 35 minutes. Once cooking is complete, carefully switch the valve to venting to release pressure, then remove the lid.
  5. Remove Mold and Trivet: Take out the trivet and the egg bite mold from the Instant Pot.
  6. Prepare Glaze and Broil: In a small bowl, mix the ketchup and apple cider vinegar together. Spoon a small amount of this glaze over the top of each meatloaf bite. Place the mold under the oven broiler for 3 minutes to caramelize the glaze.
  7. Serve: Remove from broiler, let cool slightly, then serve and enjoy your individual meatloaf bites.

Notes

  • You can use ground beef, chicken, or turkey depending on your preference.
  • Ensure the egg bite mold is firmly placed on the trivet to avoid tilting during cooking.
  • Loosely covering the mold with foil helps steam the meatloaf bites without letting water drip in.
  • Use the broiler carefully and watch closely to avoid burning the glaze.
  • These bites can be stored in the refrigerator for up to 3 days and reheated gently.
