Description

This Italian Lettuce Wrap is a quick, low-carb, and keto-friendly meal perfect for a light lunch or snack. Featuring crunchy iceberg lettuce, savory deli meats like pepperoni and salami, creamy smoked Gouda, and a tangy pepperoncini mayo, it packs bold Italian flavors without the carbs of traditional wraps.

Ingredients

Wrap and Fillings

  • 2-3 Iceberg lettuce leaves
  • 3 slices large deli Pepperoni
  • 3 slices large deli Salami
  • 1 slice smoked Gouda

Sauce

  • 1 tablespoon Mayonnaise
  • 1 tablespoon Pepperoncini Peppers, sliced

Instructions

  1. Prepare the pepperoncini mayo: In a small mixing bowl, combine the mayonnaise and sliced pepperoncini peppers thoroughly. Set aside to let the flavors meld.
  2. Prepare your workspace: Tear a 12-inch square piece of wax paper to use as a clean base for assembling the wrap.
  3. Arrange the lettuce: Place 2-3 overlapping iceberg lettuce leaves in the center of the wax paper, ensuring they create a solid barrier to hold the fillings securely.
  4. Add the fillings: Place the sliced smoked Gouda onto the center of the lettuce leaves. Then spoon the pepperoncini mayo over the cheese, followed by layering the sliced salami and pepperoni on top.
  5. Wrap it up: Using the wax paper, carefully roll the lettuce and fillings tightly like a burrito, keeping everything secure inside.
  6. Slice and serve: When ready to eat, slice the wrapped lettuce wrap down the center for easier handling and enjoy your flavorful, low-carb meal.

Notes

  • You can substitute iceberg lettuce with romaine or butter lettuce for a different texture.
  • Adjust the amount of pepperoncini peppers to control the spice level of the mayo.
  • For added crunch, consider adding thin cucumber slices or bell peppers.
  • Make sure to wrap tightly to prevent fillings from falling out.
  • This wrap is best enjoyed fresh but can be stored wrapped in the refrigerator for up to 4 hours.
