Ingredients
Lentils and Seasoning
- 1 ½ cups dry lentils
- ½ teaspoon salt
- 1 teaspoon cumin
- ¼ teaspoon Aleppo chili flakes (or red pepper flakes)
- 1 ½ tablespoons olive oil
- Squeeze of lemon juice
Tahini Sauce
- ½ cup tahini paste (stirred)
- ¼ - ⅓ cup water, more to desired consistency
- 1-2 tablespoons lemon juice (more to taste)
- 1-2 tablespoons olive oil (optional, feel free to leave it out if you prefer oil-free)
- 2 fresh garlic cloves (finely minced – grated or pressed)
- ½ teaspoon kosher salt
- ¼ teaspoon pepper
Vegetables and Toppings
- 2 cups dark leafy greens (organic spinach, arugula, kale) - if using lacinato kale, shred and massage with olive oil and salt
- 2 cups cauliflower florets, roasted or raw
- 2 cups shredded carrots, cabbage, or beets (or a mix)
- 1 bell pepper, thinly sliced (optional) or substitute with cucumber
- ¼ cup nuts or seeds (pumpkin seeds, sunflower seeds, almonds, pine nuts, etc.)
- Fresh herbs or microgreens (cilantro, flat-leaf parsley, mint, or dill)
Instructions
- Cook the Lentils: In a medium pot, cover the dry lentils with 2-3 inches of salted water. Bring to a boil, then reduce to a gentle simmer until the lentils are tender, about 20-25 minutes. Drain any excess water.
- Season the Lentils: While still warm, season the lentils with salt, cumin, olive oil, Aleppo chili flakes, and a generous squeeze of lemon juice. Adjust the salt and lemon according to your taste to make the lentils flavorful.
- Roast the Cauliflower: Preheat your oven to 400°F (200°C). Toss cauliflower florets with olive oil, salt, and pepper, then spread them on a parchment-lined baking sheet. Roast for about 20 minutes, until tender and slightly caramelized.
- Make the Tahini Sauce: In a medium bowl or 2-cup mason jar, whisk together the tahini paste and ¼ cup water until smooth. Add lemon juice, olive oil (if using), minced garlic, kosher salt, and pepper. Whisk or shake until creamy and smooth. Taste and adjust salt, lemon, or water for desired consistency.
- Prepare the Vegetables: Cut or shred the leafy greens and other raw vegetables like carrots, cabbage, or beets into small pieces. If using kale, shred and massage it with a little olive oil and salt to soften. Thinly slice bell pepper or cucumber if using.
- Assemble the Bowls: Place the warm or chilled lentils into serving bowls. Top with roasted cauliflower, leafy greens, shredded vegetables, fresh herbs or microgreens, and optional bell pepper or cucumber slices.
- Drizzle and Garnish: Generously drizzle the tahini sauce over the assembled ingredients. Sprinkle with nuts or seeds to add crunch and extra flavor.
Notes
- If using lacinato kale, massaging it with olive oil and salt helps tenderize the tough leaves.
- Adjust the seasoning of lentils and tahini sauce to your taste preference, especially the salt and lemon juice for brightness.
- Feel free to substitute or add any fresh or leftover roasted vegetables to the bowl for variety.
- Olive oil in the tahini sauce is optional and can be omitted for an oil-free version.
