  • 2 cups brown lentils (dry)
  • 1 large yellow potato (peeled)
  • 1 red onion (peeled)
  • 1 carrot (peeled)
  • 4½ cups vegetable broth (enough to cover the ingredients)

Binding and Flavoring

  • 1 cup breadcrumbs (use gluten-free if needed)
  • 1 cup parsley (chopped)
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1 tsp salt
  • 2 tbsp Chosen Foods Avocado Oil (or olive oil)

Instructions

  1. Cook Lentils and Vegetables: In a deep frying pan, combine the brown lentils, peeled potato, red onion, and carrot. Pour in vegetable broth until it covers the ingredients by at least an inch. Cover the pan and bring to a boil. Reduce the heat and simmer for about 40 minutes, adding water as needed, until the lentils are soft and the potato is mashable.
  2. Mash the Mixture: Transfer the cooked lentil and vegetable mixture to a bowl. Using a potato masher, mash the contents until you achieve a very thick texture, similar to oatmeal or a deconstructed veggie burger consistency.
  3. Preheat Cooking Equipment: While mashing, preheat your air fryer or oven to 400°F (200°C). Line a sheet pan with parchment paper if using the oven.
  4. Mix Binding Ingredients: Add the breadcrumbs, chopped parsley, garlic powder, paprika, salt, and avocado or olive oil to the mashed mixture. Using clean hands, thoroughly combine all ingredients until evenly mixed.
  5. Shape Patties: Form the mixture into approximately 20 oval-shaped patties, about half the size of your palm. They should be similar in shape and size to a flattened falafel ball.
  6. Cook Patties: Place the patties on the lined sheet pan. If using the air fryer, spray the patties lightly with oil. Air fry at 400°F for 12 to 13 minutes, flipping the patties halfway through to ensure even cooking. If using the oven, bake similarly until golden and crisp, about the same time.
  7. Serve: Serve the lentil patties in a wrap or on sub bread with fresh tomato slices, lettuce, and red onion as desired. Enjoy them warm for the best taste.

  • You can substitute gluten-free breadcrumbs if needed to keep the patties gluten-free.
  • If you do not have an air fryer, baking in the oven at 400°F for 12-15 minutes works just as well.
