These Loaded BBQ Chicken Nachos combine tender shredded chicken smothered in tangy BBQ sauce, layered with crunchy tortilla chips, fresh vegetables, black beans, corn, jalapeño, and gooey melted Mexican-style cheese. Ingredients
Chicken Mixture
- 2 ½ cups cooked shredded chicken (about 2 chicken breasts)
- 3/4 cup your favorite BBQ sauce (such as Sweet Baby Ray's)
Nacho Base
- 13 oz tortilla chips
- 2 Roma tomatoes, diced small
- 15 oz black beans, drained and rinsed
- 1 cup frozen corn, thawed
- 1/3 cup finely chopped red onion
- 1 jalapeño, seeds removed and diced small (plus extra for topping if desired)
- 2 ½ cups shredded Mexican Style cheese
Instructions
- Preheat Oven: Preheat your oven to 350º F. Line a rimmed baking sheet with aluminum foil and spray it with cooking spray to prevent sticking.
- Prepare Chicken: In a medium bowl, combine the cooked shredded chicken with the BBQ sauce. Mix thoroughly so the chicken is well coated.
- Layer First Chips: Spread 2/3 of the tortilla chips evenly across the prepared baking sheet, reaching edge to edge for a solid base.
- Add First Layer of Toppings: Distribute 2/3 of the BBQ chicken evenly over the chips. Then add 2/3 of the tomatoes, black beans, corn, red onion, and diced jalapeño.
- Add Cheese: Sprinkle 1 ½ cups of shredded Mexican-style cheese evenly over the entire baking sheet.
- Layer Second Chips and Toppings: Place the remaining chips on top of the first layer. Then layer with the remaining chicken, tomatoes, black beans, corn, red onion, jalapeño, and finish with the remaining shredded cheese and jalapeños.
- Bake: Bake in the preheated oven for 7 to 10 minutes, or until the cheese is fully melted and bubbly. Remove from oven immediately before serving.
