Description

This Magic Lemon Cobbler is a simple, citrusy dessert that creates its own tangy sauce as it bakes. With a golden, cake-like topping and gooey lemon filling, it’s the perfect spring and summer treat that’s as easy to make as it is to love.

Ingredients

  • Unsalted butter (melted)
  • All-purpose flour
  • Granulated sugar
  • Baking powder
  • Milk
  • Fresh lemon juice
  • Lemon zest
  • Hot water
  • Optional: powdered sugar for dusting, whipped cream or vanilla ice cream for serving

Instructions

  1. Preheat oven to 350°F (175°C). Pour melted butter into a 9x9-inch baking dish.
  2. In a bowl, whisk together flour, sugar, and baking powder.
  3. Stir in milk, lemon juice, and lemon zest until batter is smooth.
  4. Pour batter over the melted butter in the baking dish—do not stir.
  5. Carefully pour hot water over the top—again, do not stir.
  6. Bake for 40–45 minutes, or until the top is golden and set and the bottom is bubbling.
  7. Let cool slightly, then serve warm or chilled with your favorite toppings.

Notes

  • Don't skip the hot water pour—it creates the signature saucy layer underneath.
  • Fresh lemon juice and zest make a big difference in brightness and flavor.
  • Add berries like raspberries or blueberries for a summery twist.
  • Delicious served with a scoop of vanilla ice cream or whipped cream.
