A delicious and comforting Meatball Sub Sandwich featuring tender meatballs simmered in marinara sauce, toasted sub rolls infused with garlic and Parmesan, and melted provolone cheese, garnished with fresh parsley. Perfect for a hearty lunch or dinner in just 40 minutes.
Ingredients
Meatballs and Sauce
- 6-8 cooked meatballs (baked or heated in sauce)
- 1 cup marinara sauce (plus more for serving if desired)
Sub Rolls and Toppings
- 2 sub rolls, split lengthwise
- 2 teaspoons olive oil (more or less as needed)
- 1 large clove garlic, split lengthwise
- 1 tablespoon grated Parmesan cheese (optional)
- 2 large slices provolone cheese
- Chopped parsley (for garnish)
Instructions
- Heat Meatballs in Sauce: Prepare fresh or frozen meatballs according to package directions or your own recipe. For frozen meatballs, microwave at 50% power for 4-5 minutes. Add meatballs and marinara sauce to a medium saucepan and heat on medium-low, stirring occasionally, until warmed through.
- Toast and Flavor Rolls: Heat a large non-stick skillet over medium heat and add olive oil. When oil shimmers, place sub rolls cut side down in the pan. Toast until golden brown. Remove rolls from skillet, place the bottoms on a baking sheet, and rub all toasted sides with the cut side of the garlic clove for robust garlic flavor. Discard garlic after rubbing. Sprinkle Parmesan cheese over all four toasted sides.
- Assemble and Broil Sandwiches: Preheat oven to Low-Broil. Arrange warmed meatballs evenly on the bottom halves of each sub roll. Spoon additional marinara sauce over meatballs, then place a slice of provolone cheese on top. Place the baking sheet with assembled sandwiches on the center rack of the oven. Broil on low until the provolone cheese is melted and bubbly, about 2-4 minutes. Keep an eye on them to prevent burning.
- Finish and Serve: Garnish the meatballs with freshly chopped parsley. Immediately top the meatballs with the toasted top halves of the rolls and gently press down. Secure each sandwich with a toothpick if desired. Serve the meatball subs hot and enjoy!
