Description

These Mini Baked Brie Bites are a festive and easy-to-make 3-ingredient holiday appetizer featuring flaky puff pastry, creamy brie cheese, and your favorite jam or preserves. Perfect for entertaining, they combine sweet and savory flavors wrapped in golden, crisp pastry for a crowd-pleasing bite-sized treat.


Ingredients

Puff Pastry

  • All-purpose flour, for dusting
  • 2 sheets puff pastry (about 18 ounces total), homemade or thawed from frozen

Filling

  • 4 ounces brie, cut into 1/2-inch pieces
  • 1/4 cup jam or preserves of choice (e.g., whole cranberry sauce, fig preserves, raspberry preserves, apricot preserves, pepper jelly, caramelized onions, or onion jam)

Eegg Wash and Topping

  • 1 large egg, whisked with 1 tablespoon water
  • Turbinado sugar, for dusting (optional)


Instructions

  1. Roll and cut puff pastry: Line a baking sheet with parchment paper and set aside. Lightly dust a clean work surface with flour. Unfold the puff pastry sheets and lightly dust with flour. Roll out gently into a 10×14-inch rectangle. Using a 3-inch biscuit cutter or the lid of a wide mouth mason jar, cut out 24 circles from the pastry. Arrange 12 circles on the baking sheet for the bottoms; set aside the other 12 for the tops.
  2. Assemble mini baked brie bites: Place about 1/2 teaspoon of your chosen preserves in the center of each bottom puff pastry circle on the baking sheet. Top each with a 1/2-inch cube of brie. Lightly brush the edges around the filling with egg wash. Place the reserved puff pastry circle over the filling, pressing down to seal and crimp edges with a fork to secure the mini bites.
  3. Chill the mini baked brie: Transfer the baking sheet to the freezer for 15-20 minutes to firm up the bites. Meanwhile, preheat the oven to 425°F (218°C) and position a rack in the top third of the oven.
  4. Finish the mini baked brie: Remove the chilled mini brie bites from the freezer. Brush the tops with additional egg wash for a golden finish. Optionally, sprinkle turbinado sugar generously over each bite. Using a paring knife, cut a small slit in the center of each pastry to allow steam to vent.
  5. Bake the mini baked brie: Bake the assembled bites in the preheated oven for 20-22 minutes, rotating the baking sheet halfway through baking, until golden brown and crisp. Remove from the oven and cool for 5-10 minutes to set before serving.
