Description

A delicious and elegant New Potato & Cheese Puff Pastry Tart infused with fresh summer herbs. This savory tart features thinly sliced new potatoes layered over a buttery puff pastry base slathered with tangy Dijon mustard, topped with melted Gruyere cheese and fragrant chives and dill. Perfect as an appetizer, light lunch, or side dish, and ready in just 45 minutes.


Ingredients

Pastry Base

  • 1 sheet ready-made puff pastry (all butter)
  • 1/4 cup Dijon mustard
  • 1 egg, lightly beaten (for egg wash)

Filling & Toppings

  • 2 cups thinly sliced new potatoes (preferably sliced with a mandolin)
  • 1 1/2 cups shredded Gruyere or similar melting cheese
  • 2 tablespoons chopped fresh chives and dill
  • 2 tablespoons poppy seeds
  • Olive oil for drizzling


Instructions

  1. Preheat and Prepare Pastry: Preheat the oven to 400ºF (200ºC). Lay out the puff pastry sheet on a baking tray lined with parchment paper. Using a mandolin or sharp knife, thinly slice the new potatoes.
  2. Spread Mustard: Evenly spread the Dijon mustard over the puff pastry, leaving a 1-inch border around the edges to create a crust.
  3. Add Cheese and Potatoes: Sprinkle a layer of shredded Gruyere cheese over the mustard-coated pastry. Arrange the thinly sliced potato slices evenly on top of the cheese, keeping the 1-inch border free.
  4. Drizzle Olive Oil and Fold Edges: Drizzle olive oil lightly over the potatoes to keep them moist and flavorful. Fold the edges of the puff pastry over to encase the potatoes slightly.
  5. Egg Wash and Toppings: Brush the exposed pastry edges with the beaten egg wash for a golden finish. Sprinkle poppy seeds evenly over the egg-washed pastry edges for added texture and flavor.
  6. Add Final Cheese and Herbs: Sprinkle the remaining shredded cheese over the potatoes and pastry edges. Follow by scattering the chopped chives and dill over the tart.
  7. Bake the Tart: Place the tart in the preheated oven and bake for about 25-30 minutes, or until the pastry is golden brown, puffed, and the potatoes are tender. Once out of the oven, optionally drizzle with extra olive oil and garnish with additional fresh herbs.
