Instructions
- Mix the base ingredients: In the bowl of an electric mixer fitted with the paddle attachment, add the oats, ground flaxseed, peanut butter, honey, and vanilla. Mix on low speed until all ingredients are thoroughly combined into a uniform dough-like mixture.
- Add chocolate chips and form balls: Gently fold in the dark chocolate chips by hand. Then, roll the mixture into smooth balls about 2 tablespoons in size, ensuring even portions. Place the formed bites on a parchment-lined baking sheet.
- Chill and store: Refrigerate the energy bites for at least 30 minutes to allow them to firm up. Once set, transfer to an airtight container and store in the refrigerator for up to 2 weeks. Enjoy immediately or keep chilled for a quick snack anytime.
