Description

These No Bake Oreo Truffle Eyeballs are a spooky and delightful Halloween treat that's quick and easy to make. Perfect for parties and fun to make with kids, these truffles combine crushed Oreos and cream cheese coated in white chocolate, decorated to look like creepy eyeballs.

Ingredients

Base

  • 1 package Oreos (20 cookies)
  • 6 ounces cream cheese, room temperature

Coating & Decoration

  • 2 cups white chocolate
  • 1 Red Wilton Foodwriter pen
  • 1 Ready to Use Green Decorating Icing (or homemade with white icing and green food coloring)
  • 30 Black M&M's

Instructions

  1. Crush the Oreos: In a food processor, crush the Oreos until fine crumbs form. Transfer the crushed cookies to the bowl of an electric mixer and combine with the room temperature cream cheese until the mixture is smooth and well incorporated.
  2. Shape the Truffles: Form the Oreo and cream cheese mixture into 30 evenly sized balls. Place them on a baking sheet lined with parchment paper. Freeze the truffles for 30 minutes to firm up.
  3. Melt the White Chocolate: Melt the white chocolate in a microwave-safe bowl. Heat for 30 seconds, then stir. Continue to microwave at 15-second intervals, stirring between each, until the chocolate is completely melted and smooth.
  4. Dip the Truffles: Remove the truffles from the freezer. Dip each truffle into the melted white chocolate, turning to coat it completely. Place the coated truffles back onto the parchment-lined baking sheet and allow the chocolate to harden.
  5. Decorate: Using the red Wilton Foodwriter pen, draw red veins over each white chocolate-coated truffle to create a spooky eyeball effect. Add a small dot of green decorating icing on top and gently press a black M&M into the center to resemble the pupil.
  6. Store: Transfer the decorated truffles to an airtight container and store them in the refrigerator for up to 2 days to keep them fresh.

Notes

  • Make sure the cream cheese is softened to room temperature for easier mixing.
  • Work quickly when dipping in chocolate to prevent the truffles from warming up too much.
  • Use parchment or wax paper for easy cleanup and to prevent sticking.
  • These truffles are best served chilled but can be left out for a short while before serving.
  • For a dairy-free option, substitute cream cheese and white chocolate with vegan alternatives.
