Ingredients

Base

  • 1 cup graham cracker crumbs (about 8 sheets)
  • 1/2 cup butter
  • 1 cup peanut butter
  • 1 cup powdered sugar

Chocolate Topping

  • 1.5 cups chocolate chips
  • 2 Tbsp peanut butter

  • 25 mini pretzels


Instructions

  1. Prepare Graham Cracker Crumbs: If your graham crackers aren't already in crumb form, place them in a food processor and blitz them until you achieve fine crumbs, ensuring an even texture for the base.
  2. Melt Butter and Peanut Butter: Combine the butter and 1 cup of peanut butter in a microwave-safe bowl. Heat in 30-second intervals, stirring after each until the mixture is warm and melted enough to combine smoothly. Reserve the remaining 2 Tbsp of peanut butter for later use.
  3. Mix Base Ingredients: Add the powdered sugar and graham cracker crumbs into the melted peanut butter mixture. Stir thoroughly until everything is evenly incorporated to form the base layer.
  4. Press Base Layer: Line an 8x8-inch baking dish with parchment paper, allowing some overhang on the sides for easy removal later. Press the peanut butter mixture firmly and evenly into the bottom of the dish.
  5. Melt Chocolate Topping: In a bowl, combine the chocolate chips with the reserved 2 Tbsp peanut butter. Microwave for 30 seconds, then stir. Continue microwaving in 15-second increments, stirring each time, until the chocolate is fully melted and the mixture is smooth.
  6. Add Chocolate and Pretzels: Pour the melted chocolate evenly over the peanut butter base and spread it smoothly. Arrange the mini pretzels in even rows on top (e.g., five rows of five) for an attractive presentation and added crunch.
  7. Chill to Set: Refrigerate the bars for at least two hours until completely set. Once set, use the parchment paper overhang to lift the whole slab out of the dish and cut into squares between pretzels with a sharp knife. Serve immediately or store refrigerated or frozen.
