Description

This No Churn Creamy Peach Sorbet is a refreshing and vibrant summer treat made with just three simple ingredients: frozen peaches, overripe bananas, and lime juice, enhanced with a splash of vodka or white rum for texture. It's a plant-based, naturally sweet, and creamy dessert that requires no ice cream maker—just a food processor. Perfect for warm days, this easy-to-make sorbet is healthy, dairy-free, and sure to satisfy your sweet tooth.

Ingredients

Fruit Base

  • 400 gm peaches, halved and pitted
  • 200 gm overripe bananas, peeled and chopped

Other Ingredients

  • Juice of 1 lime
  • 2 tbsp vodka or white rum (or water as a substitute)

Instructions

  1. Prepare the Fruit: Halve the peaches, remove the pits, and roughly chop them. Peel and chop the overripe bananas. Squeeze the juice of one lime directly over the chopped fruits and place everything into a zip lock bag.
  2. Freeze the Fruit: Seal the bag and freeze the fruit mixture overnight or for at least 12 hours until completely frozen.
  3. Blend the Frozen Fruit: Transfer the frozen fruit mixture to a food processor. Add 2 tablespoons of vodka, white rum, or water. Begin blending on low speed, gradually increasing the speed. Pause occasionally to scrape down the sides to ensure even blending.
  4. Achieve Smooth Texture: Continue blending until the mixture becomes smooth and creamy, resembling soft serve sorbet.
  5. Serve or Store: Spoon the sorbet into a container or tin. Serve immediately for a soft texture, or freeze for additional firmness before serving as needed.

Notes

  • You can add a little vanilla extract and a pinch of salt to enhance the flavor profile.
  • Using vodka or white rum helps keep the sorbet texture smooth and scoopable by preventing it from freezing too hard.
  • Overripe bananas provide natural sweetness and creaminess, so no additional sugar is needed.
  • This recipe is vegan and dairy-free.
