Ingredients

Chicken

  • 1 lb. boneless, skinless chicken thighs

  • 2 tablespoons vegetable oil, divided

  • ½ cup light brown sugar
  • ¼ cup finely chopped sweet onion
  • ½ teaspoon minced fresh rosemary
  • 1 tablespoon apple cider vinegar
  • Juice from ½ of a lemon (about 1 tablespoon)
  • 1 tablespoon Dijon mustard
  • ¼ teaspoon kosher salt

Instructions

  1. Prepare the blackberry mixture: In a small bowl, combine the fresh blackberries and light brown sugar. Stir gently to mix and set aside to allow the berries to release their juices.
  2. Heat the skillet: Place a large skillet over medium-high heat and add 1 tablespoon of vegetable oil. Swirl the pan to coat the bottom evenly with the oil.
  3. Cook the chicken: Pat the chicken thighs dry with paper towels. Season both sides generously with kosher salt and ground black pepper. Add the chicken to the hot skillet and cook for about 7 minutes on each side or until the chicken is cooked through and golden brown. Ensure the internal temperature reaches 165°F. Remove the chicken from the skillet and set aside on a plate. Cover with foil to keep warm.
  4. Sauté aromatics and develop sauce: Without cleaning the skillet, add the remaining 1 tablespoon of oil. Add the chopped sweet onion and minced rosemary. Cook and stir for about 1 minute until fragrant and slightly softened. Then add the blackberry and brown sugar mixture, apple cider vinegar, lemon juice, Dijon mustard, and ¼ teaspoon kosher salt.
