It's studded with mini marshmallows for a sweet, chewy texture, making it a perfect dish for potlucks, brunches, or as a light, fruity treat.
Ingredients
Gelatin Mixture
- 3 ounces orange-flavored gelatin
- 1 cup boiling water
- ½ cup cold water
Pudding Mixture
- 3.4 ounces instant vanilla pudding mix
Salad Ingredients
- 8 ounces whipped topping (thawed)
- 2 cups mini marshmallows
- 28 ounces mandarin oranges (drained, reserve 8 to 10 segments for garnish)
- ¼ cup mini marshmallows (optional, for garnish)
Instructions
- Dissolve Gelatin: In a medium heat-safe bowl, combine the orange-flavored gelatin with 1 cup of boiling water, stirring continuously until the gelatin is completely dissolved.
- Add Cold Water and Chill: Stir in ½ cup cold water to the gelatin mixture, then place the bowl in the refrigerator and chill for 15 minutes to allow it to start setting.
- Incorporate Pudding Mix: Remove the bowl from the refrigerator and whisk in the instant vanilla pudding mix thoroughly until the mixture is smooth and fully blended. Cover the bowl and refrigerate for an additional 20 minutes.
- Blend Salad Ingredients: Take the mixture out of the refrigerator and gently fold in the thawed whipped topping, drained mandarin oranges, and mini marshmallows until the ingredients are evenly combined.
- Final Chill: Return the salad to the refrigerator and chill for at least 2 hours or preferably overnight. This chilling step helps the salad set and develop the best texture and flavors.
- Garnish and Serve: Just before serving, top the salad with the reserved mandarin orange segments and the optional mini marshmallows for a decorative and flavorful finishing touch.
Notes
- For best results, chill the salad overnight to allow flavors to meld and the gelatin to fully set.
- If you prefer a firmer salad, you can increase the refrigeration time.
- Use canned mandarin oranges that are well-drained to avoid excess liquid in the salad.
- The mini marshmallows can be omitted or replaced with chopped nuts for a different texture.
- This salad is best served cold and eaten within 2 days of preparation.
